The mix of tomatoes, orange juice, and white wine makes this a fabulous dish. Great for dinner parties, or just for family... the leftovers are wonderful. At just 341 calories/serving (2 chicken thighs with some broth) it also fits nicely into most diets. Serve over brown rice or pasta for a full meal.

Recipe Ingredients for Ellen's Chicken Caccitore

2 tbsp. olive oil
440 g. Chicken, Thigh, Meat Only (8 chicken thighs)
1 medium onion, chopped
3 cloves garlic, minced
28 oz. diced tomatoes (canned)
3/4 c. orange juice
3/4 c. white wine
1 c. mushrooms, diced
2 tbsp. dried rosemary

Recipe Directions for Ellen's Chicken Caccitore

  1. In a large frying pan, sautee the chicken in the olive oil until it turns slightly brown. Remove chicken from pan and set aside.

  2. Add onions and garlic to the drippings in the pan and sautee for about 5 minutes.

  3. Then add the remaining ingredients, and mix well. Return the chicken to the pan.

  4. Cover and simmer until chicken is cooked through (about 30 minutes).

  5. Salt and pepper to taste.
