Easy, delicious, and surprisingly low in calories. A very tasty vegetarian version of this soup. NOTE: A serving is 1 cup.

Recipe Ingredients for Ellen's & Carol's Split Pea Soup

1 lb. green split peas
8 c. water
2 carrots, diced
1 large onion, diced
3 celery stalks, diced
1 tbsp. salt
1/2 tsp. pepper

Recipe Directions for Ellen's & Carol's Split Pea Soup

  1. Please all ingredients in a large pot for 2 hours (lightly simmer).

  2. Using a hand held immersion blender (or an upright blender in batches), mix the soup so it's smooth.

  3. Serve hot.
