This is closer to being a stew than a soup, so if you want more broth, go ahead and add it. Bear in mind, though, that the vinegar and soy sauce are the ingredients that turn this veggie soup from being on the bland side to being strikingly zesty. Add these ingredients slowly, tasting as you go. You'll know when you've arrived because the difference in flavor is remarkable. This soup never fails to get compliments.

Recipe Ingredients for Ellen's Cabbage and Root Veggie Soup

2 tbsp. olive oil
2 medium yellow onions, chopped
1/2 cabbage head, chopped
3 large carrots, chopped
1 c. parsnips (about 3), chopped
1 medium turnip, chopped
2 celery stalks, chopped
24 oz. diced tomatoes (one large can)
8 c. chicken broth, low-fat, low sodium (veggie broth works too)
1 c. green beans, cut into bite sized pieces (fresh or frozen)
2 tbsp. lemon juice
1/4 tsp. dill, dried
2 tbsp. oregano, dried
2 tbsp. basil, dried
1/4 c. apple cider vinegar
3 tbsp. soy sauce

Recipe Directions for Ellen's Cabbage and Root Veggie Soup

  1. In a large soup pot, sautee the onions and cabbage over medium-low heat until fully wilted (about 20 minutes).

  2. Add the diced tomatoes and stir.

  3. Add the broth and all ingredients except the vinegar and soy. Stir and cook over medium-low heat until the broth is warm.

  4. Add the vinegar and soy in small amounts, stirring and then tasting as you go. When the flavor turns from bland to "wow", cover the pot and cook on low until the vegetables are tender.

  5. NOTE: add salt and pepper as needed.

  6. Another note: this freezes well.
