This is really a vegetable soup which uses a cabbage/onion sautee as its base. Because I'm limited by the size of my soup pot, I start with 10 c. of water. Then, after serving the soup for one meal, I add additional water to keep the broth at a level that my husband and I prefer, which is about an additional 6 cups of water. If you've got a great big soup pot, you can start with the 16 c. or water (or more). There's a lot of veggies in this dish ;)

Recipe Ingredients for Ellen's Cabbage Borscht

2 tbsp. olive oil
1 tbsp. butter
2 onions, large (diced)
1/2 head cabbage, chopped
24 oz. tomatoes, canned (diced)
2 carrots, large (diced)
2 celery stalks, large (diced)
6 red potatoes, small, cut into bite size pieces
3/4 c. green beans, cut to 1" pieces
1 turnip, small (diced)
1 zucchini, diced
1 yellow squash (crookneck/summer), diced
16 c. water
1 tbsp. bouillon (Better than Bouillon, chicken)
1/4 c. soy sauce
1/4 c. apple cider vinegar
1 tbsp. fresh thyme
2 tbsp. oregano

Recipe Directions for Ellen's Cabbage Borscht

  1. In the bottom of your soup pot, sautee the olive oil, butter, onions, and cabbage until they're tender (about 20 minutes). Add the tomatoes and remaining ingredients, making sure the veggies are covered well with water.

  2. A note about the soy sauce and vinegar: add these ingredients in equal amounts, a little bit at a time, tasting as you go. You'll know you've added enough when the broth has a distinct but subtle shift in flavor (it will be "deeper").

  3. Add the herbs in an amount that suits your taste.

  4. Simmer for 1-2 hours.

  5. NOTE: You can freeze this (or leftovers) for several months.
