A great way to greet Autumn. Very easy to make. Serve topped with a dollop of low fat sour cream and it's a gourmet treat.

Recipe Ingredients for Ellen's Butternut Squash (162 cal/cup)

4 tbsp. olive oil
2 medium onions, diced
4 tbsp. curry powder
2 apples, red delicious (or Granny Smith) peeled, cored, and diced
4 c. butternut squash, seeds removed, peeled and diced
4 c. fat free chicken broth
7 oz. apple juice
1 salt and pepper to taste

Recipe Directions for Ellen's Butternut Squash (162 cal/cup)

  1. In a soup pot, sautee the onions with the curry powder until the onions are translucent (about 20 minutes). Meanwhile, peel and dice the squash and apples.

  2. Add the squash, apples, and chicken broth and bring to a boil. Then cover and let simmer for 20 minutes, or until squash and apples are fully cooked.

  3. Add the apple juice, stir well, and cook for another 5 minutes.

  4. Puree the mix with a hand-held blender (or a counter-top blender if you don't have the hand-held kind) until smooth.

  5. Serve hot.
