The combination of beef tenderloin and bleu cheese carries this salad into "main entree" status for a casual but classy lunch or dinner. Dress with balsamic vinaigrette and serve with a freshly baked loaf of French or Italian bread (with olive oil for dipping).

Recipe Ingredients for Ellen's Black and Bleu Salad

1 head lettuce, red leaf, rinsed and torn to bite size
1/2 cucumber, diced
1 tomato, large, diced
1 celery stalk, diced
1/2 c. red onion, diced
2 oz. blue cheese, crumbled
1/4 c. pecans, toasted
1 lb. filet mignon, cooked

Recipe Directions for Ellen's Black and Bleu Salad

  1. Season the filet with steak seasoning and broil or bake until medium rare.

  2. Meanwhile, combine all other ingredients in a salad bowl.

  3. When the meat is cooked, chop it into bite size pieces and add it to the rest of the salad. Toss with balsamic vinaigrette dressing (calories for that are not included in the above calorie count). Serve while the meat is still warm.
