This is food for a cold day. It's great served with brown rice and corn muffins. But it's high in calories, so take it easy.

Recipe Ingredients for Ellen's Black Bean Chili

2 tbsp. olive oil
1 onion, chopped
4 4/5 oz. can green chilies, chopped (small can)
2 tsp. garlic, minced
1 tsp. cumin
1 tsp. coriander
1 tsp. chili powder
1/2 tsp. red pepper flakes
4 lbs. black beans, canned (4 smaller cans or 2 large cans)
28 oz. tomatoes, diced (1 large can)
3/4 tsp. salt
1 tbsp. vinegar, red-wine
1/4 c. tequila (the secret incredient)
1 tbsp. unsweetened cocoa powder
1/2 c. cilantro, fresh, chopped (use scissors; it's easier)

Recipe Directions for Ellen's Black Bean Chili

  1. In a large pot, sautee and onions, chilies, and garlic in the olive oil for about 5 minutes.

  2. Then add the cumin, coriander, chili powder, and red pepper flakes. Stir.

  3. Next add the remaining ingredients and stir. Bring to a simmer, then reduce heat to low for 30 minutes, stirring occasionally.

  4. If you like, you can blend half of the mix with a hand held blender.

  5. Serve with a dab of low fat sour cream and Polenta Muffins.

  6. (If you eat all the above, including the muffins, you'll blow your diet for the day if you eat anything else, let alone the glass of red wine that tastes so good with this.
