An old stand-by that serves as the base for some wonderful variations (try adding some Herbs de Provence, or Toasted Sesame Oil and ginger... although if you do this, use white wine or rice vinegar). This base is a good one to get to know so you can throw it together in minutes. Salads are always best when served at room temperature.

Recipe Ingredients for Ellen's Balsamic Vinaigrette

1/2 c. olive oil, extra virgin
1/4 c. vinegar, balsamic
1 tbsp. Dijon mustard
1 clove garlic, minced
1 tbsp. Worcestershire Sauce

Recipe Directions for Ellen's Balsamic Vinaigrette

  1. Mix all ingredients together in a jar. Put the cap on tightly and shake.

  2. When dressing your salad, drizzle half of what you think you'll need of the dressing and then toss very well (3-5 minutes or more). If you toss long enough, you won't need to add more dressing and you've cut the calories in half.
