Using bison or turkey, this recipe adds some "beef" to your spaghetti dinners ;)

Recipe Ingredients for Ellen's Baked Meatballs

1 slice multigrain bread
1/3 c. grated Parmigiano-Reggiano cheese
1/4 cup milk
1/4 cup chopped fresh flat-leaf parsley
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound ground turkey or bison
2 garlic cloves, peeled and minced
1 large egg
1 Cooking spray

Recipe Directions for Ellen's Baked Meatballs

  1. Preheat oven to 400.

  2. Combine all ingredients except the cooking spray. Mix well.

  3. Spray a cookie tin.

  4. Then with your hands, make about 24 one-inch meatballs and place on a cookie tin.

  5. Bake for 15 minutes or until done.
