Recipe Ingredients for Elk bourguignon

2 pounds venison
1 cup diced onion
1 tablespoon tomato paste
1 pound mushrooms
1 cup pearl onions
2 cups red wine
2 cups beef broth
2 tablespoons olive oil
1/4 cup flour

Recipe Directions for Elk bourguignon

  1. cut elk in 2 inch cubes, season, dust with flour and brown

  2. saute onion

  3. add elk back to pan

  4. add wine, tom. paste, broth

  5. season with rosemary, garlic, thyme, parsley, s & p

  6. add bay leaf

  7. simmer 2 1/2 hours

  8. serve over mashed potatoes or noodles
