Basic Meatloaf. Add different spices for variations. You can add crushed tortilla chips instead of bread crumbs and some taco seasoning to give it a Mexican flavour.

Recipe Ingredients for Elizabeth's Meatloaf

1 lb lean ground beef
1/2 cup green pepper, chopped
1 jalapeno pepper, chopped
1 carrot, chopped
1/2 onion, chopped
1 large egg
1/4 cup bread crumbs

Recipe Directions for Elizabeth's Meatloaf

  1. Mix all ingredients, shape into loaf and bake until internal temperature reaches 71 degrees celcius.

  2. You can top with barbeque sauce and parmesan cheese but remember to add the extra calories.
