Recipe Ingredients for Elegantly Simple Stuffed Bell Peppers

235 ml water
6 bell peppers
45 ml oil
1/8 tsp salt
1/4 tsp pepper
2 Yellow Onion
4 garlic cloves
455 g tomatoe
70 g raw almonds
415 g cooked long-grain rice
18 g fresh mint
12 g fresh parsley
8 g fresh basil
27 g raisins
12 g ground almond

Recipe Directions for Elegantly Simple Stuffed Bell Peppers

  1. oven 375f

  2. boil 1 cup water to put around peppers in a pan

  3. halve peppers lengthwise leaving stem intact if possible, scoop seeds out, brush cut sides with oil, place cut sides up in a shallow, lightly oiled baking dish, and sprinkle with salt and pepper to taste. bake 15 mins until soft when poked with for but still keeping shape.

  4. heat some (45ml) water or stock in a large soup pot. saute onions and garlic for 5 minutes over medium heat, until onions become translucent. Add tomatoes and raw almonds, and saute for another minute or two.

  5. Remove from heat and stir in rice, mint parsley, basil, and raisins. season well with salt and pepper, then spoon mixture into the peppers still on the baking sheet.

  6. pour 2/3 to one cup boiling water around the peppers, just enough to touch the base so they dont burn.

  7. Bake uncovered for 15 minutes. sprinkle ground almonds on top. return to oven and bake for 15 minutes longer. serve garnished with fresh herbs, if desired.

  8. yield 12 servings.
