Makes 4 servings



Tasty and elegant roasted red potatoes. A wonderful accompaniment to pork chips or roast chicken. Also wonderful as when cooled as a side dish for a luncheon.

Recipe Ingredients for Elegant Roasted Red Potatoes

2 lbs small red potatoes, halved
8 cloves garlic, peeled
2 tsp dried rosemary
2 tbsp extra virgin olive oil
1 Salt and pepper

Recipe Directions for Elegant Roasted Red Potatoes

  1. Cut up small red potatoes into halves or quarters.

  2. Put into nonstick baking pan

  3. Toss in a small amount of EVOO (as much as desired or needed)

  4. Sprinkle with rosemary leaves and toss (can use fresh if desired)

  5. Add a few peeled whole cloves of garlic and toss (add as much or as little garlic as you desire)

  6. Bake uncovered for 45 min at 375 deg C with an occasional toss (or until done, depends on potato size).

  7. Salt and pepper to taste

  8. Serves 4
