Recipe Ingredients for elaine's zucchini lasagna

2 zucchini
112 serving Extra Lean 99% Fat Free Fresh Tray Ground Breast
1 tsp black pepper
1 tsp salt
1 tsp oregano
1 tsp basil
1 cup onion
1 bell pepper
6 oz tomato paste
16 oz tomato sauce
1/4 cup red wine
1 egg
15 oz ricotta cheese
4 cups mushrooms
4 cups spinach
8 oz mozarella cheese
4 oz parmesan cheese

Recipe Directions for elaine's zucchini lasagna

slice zucchini lengthwise in thin slices, sprinkle lightly with salt and set aside in colandar. cook ground turkey, onion and bell pepper in nonstick skillet till turkey is done. add seasonings, tomato sauce and paste, wine and a little water if sauce is too thick. simmer 20 min. meanwhile stir egg and ricotta together. to assemble lasagna, spread 1/2 the meatsauce in the bottom of a 9x13 casserole sprayed with cooking spray. then layer 1/2 the zucchini, 1/2 the ricotta, all the spinach, all the mushrooms, 1/2 the mozzarella. repeat with remaining meatsauce, zucchini, ricotta, and mozzerella. top with parmesan. cover with foil and bake at 325 for 45 minutes. raise oven temp to 350, remove foil and bake another 15 min. let stand 5 min before serving.
