1 muffin = 1 serving. If baking in a loaf pan, bake 50 min and cut into 12 slices.

Recipe Ingredients for Elaine's Whole Wheat Banana Muffins

2 1/4 cup whole wheat flour
3/4 tsp baking soda
1/4 tsp salt
3 bananas
2 oz Yogurt
1/4 cup honey
2 eggs
1/3 cup coconut oil
1 tsp vanilla

Recipe Directions for Elaine's Whole Wheat Banana Muffins

Preheat oven to 350. Spray pan. Whisk together flour, baking soda and salt. In a separate bowl mix mashed bananas with non-fat plain regular or greek yogurt, honey, eggs, oil, and vanilla. Fold the banana mixture into the flour mixture until blended. Do not overmix. Pour batter into prepared pan. For loaf, bake 45-50 min.; for muffins, bake 20-25 min. or until toothpick inserted into center comes out clean.
