Recipe Ingredients for elaine's tequila lime salmon

12 oz salmon
1 1/2 teaspoons extra-virgin olive oil
1/2 teaspoon fine sea salt
1/2 cup Salsa
1 grapefruit
1 cup tangerine

Recipe Directions for elaine's tequila lime salmon

Preheat oven to 400F. Arrange salmon skin-side down on a parchment-paper-lined baking sheet. Brush all over with oil and season with salt. Peel and segment fruits, removing pith and tough membrane and cutting into chunks. In a medium bowl, combine salsa, grapefruit and tangerine, spoon evenly over salmon and bake until just cooked through, about 10 minutes. Serve with additional salsa on the side, if you like.
