Recipe Ingredients for Elaine's Pistachio Ice Cream

2 cups pistachios
1 cup sugar
4 cups whole milk
6 cups heavy cream
24 egg yolks
1 cup sugar
1 teaspoon almond extract

Recipe Directions for Elaine's Pistachio Ice Cream

  1. Process pistachios and 1 cup sugar in food processor until smoothly ground but not butter.

  2. Bring milk and heavy cream to a boil.

  3. Whisk together egg yolks and remaining sugar.

  4. Temper the yolk mixture with hot milk, then combine liquids and cook to 169 degrees, or until the mixture coats the back of a spoon.

  5. Strain mixture and cool. Add extract and nuts.

  6. When cooled, process in ice cream maker.
