Recipe Ingredients for elaine's lentil soup

8 cups low sodium organic chicken broth
1 lb lentils
1/2 cup celery
1/2 cup carrot
1/2 cup onion
2 tbs olive oil
1 tsp kosher salt
1/2 tsp pepper
1/2 tsp cumin
14 1/2 oz Diced Tomatoes, No Salt Added

Recipe Directions for elaine's lentil soup

Heat 2 tbs olive oil, add chopped onion, celery, carrot; cook a few minutes. Add broth (chicken or vegetable broth), tomatoes, lentils, and seasonings. Bring to boil, then simmer 35-40 min.
