Recipe Ingredients for elaine's hatch chicken squash soup

2 tbs extra virgin olive oil
3 cloves garlic
1 cup celery
1/2 cup onion
2 yellow squash
32 oz no sodium vegetable broth
15 oz organic diced tomatoes
15 oz low sodium black beans
10 oz chicken breast
4 cups beet greens
1/2 cup barley
1/2 tsp cumin
1/2 tsp black pepper
1 tsp salt
1 cup hatch green chilis

heat oil, sautee chopped onion, garlic and celery till tender, add squash and sautee a couple minutes more, than add rest of ingredients. bring to boil and simmer 45 min.
