Recipe Ingredients for Elaine's crockpot pinto beans

1 lb dry pinto beans
32 oz low-sodium chicken broth
14 oz rotel tomatoes
3 cups spinach
1 cup carrots
1 cup celery
1/2 cup onion
3 cloves garlic
1 tsp oregano
1 cup water

Recipe Directions for Elaine's crockpot pinto beans

rinse and soak beans overnight. place in crockpot along with chopped vegetables (except spinach and cilantro), broth, water, tomatoes and oregano. set crockpot to high and let cook for 7 hours. set temperature to warm and add chopped spinach and cilantro and let sit for 20 minutes, then serve.
