Recipe Ingredients for elaine's crockpot beef stuffed bell peppers

1 lb lean ground beef
4 bell peppers
2 cloves garlic
1/4 yellow onion
1 stalk celery
1 cup cooked barley
15 oz organic diced tomatoes
6 oz tomato paste
1/2 tsp basil
1/2 tsp oregano
1/4 tsp black pepper
1/4 tsp salt

Recipe Directions for elaine's crockpot beef stuffed bell peppers

Mix diced tomatoes and tomato paste till blended. Cut off tops of bell peppers and clean out seeds; dice up any extra bell pepper. Dice other veggies and mix into beef, along with cooked barley. Add seasonings. Add enough tomato sauce to moisten meat mixture, then pour the rest on the bottom of the crock pot. Stuff meat mixture into bell peppers and arrange in crock pot. Pour any remaining meat mixture into pot around peppers. Cook on low 6-8 hours.
