Recipe Ingredients for EKHA Caramelized Broccoli and Onion Stuffed Shells

2 tablespoons extra-virgin olive oil
4 cups broccoli florettes
2 small red onions, thinly sliced
4 teaspoons dried red pepper flakes
4 cloves garlic, minced
120 grams kalamata olives, pitted and chopped
1 cup low-fat ricotta cheese
1/2 cup tomato paste
4 cups stewed Italian tomatoes
1 cup fresh basil leaves, chopped
300 grams jumbo pasta shells, 24, cooked al dente
1 cup shredded part-skim mozzarella

Recipe Directions for EKHA Caramelized Broccoli and Onion Stuffed Shells

  1. Preheat oven to 350 degrees F.

  2. Heat 2 tablespoons olive oil in a large nonstick saute pan over medium heat. Once

  3. the oil is hot, add the broccoli, onions, red pepper flakes, and 2 cloves minced garlic.

  4. Slowly saute the broccoli, stirring occasionally until it starts to brown all over, about

  5. 10 minutes. Add the olives and continue to cook about 1 more minute. Remove from

  6. heat and add the ricotta cheese, stirring to evenly distribute.

  7. While broccoli and onions are caramelizing, prepare the tomato sauce: heat 1

  8. teaspoon olive oil in a medium-size saucepan over medium heat. Add remaining 2

  9. cloves minced garlic and cook for 1 minute. Add the tomato paste and stewed

  10. tomatoes. Bring to a simmer and cook for 5 minutes. Stir in the basil and remove

  11. from the heat.

  12. Spread about 1/3 of the sauce in the bottom of a 13 by 9 by 2 inch-baking dish. Stuff

  13. the shells with the broccoli mixture. Arrange the stuffed shells in the baking dish and

  14. top with the remaining sauce. Sprinkle evenly with the mozzarella. Bake, uncovered,

  15. for 20 minutes. Serve immediately.
