Delicious Chicken Pot Pie with potatoes, peas and carrots.

Recipe Ingredients for Eileen's Homemade Chicken Pot Pie

5 white potatoes
5 carrots
2 cups frozen peas
12 oz skim evaporated milk
1/2 cup chopped onion
1/3 cup margarine
2/3 cup flour
3/4 tsp salt
1/2 tsp sage
1/4 tsp pepper
2 1/2 cups water
1 tablespoon instant chicken bouillon granules
3 cups boneless chicken breast

Recipe Directions for Eileen's Homemade Chicken Pot Pie

  1. Peel and cube potatoes and peel and slice carrots. Cook in water until fork tender.

  2. Melt margarine. Chop onion and cook in margarine until translucent.

  3. Combine flour, salt, sage and pepper. Add to margarine and onion and stir together. Take off heat.

  4. Add evaporated milk and wisk into flour/onion/butter mixture. Put back on stovetop. Wisk until smooth and slowly add water. Stir constantly.. mixture will come to a slow boil over med heat. Stir aprox 3 minutes longer or until mixture thickens. Add cooked chicken. Drain vegetables and add to mixture. Pour into casserole cook and bake at 350 for aprox 20 minutes or until mixture bubbles.

  5. Sometimes I will also add prepared refridgerator biscuits pulled apart and laid on top of mixture. Cook until biscuits are browned.
