This is a delicious take on the ever so fatty "Eggy in a Basket," most popular for it's appearence in "V for Vendetta." It makes a delicious breakfast, lunch, dinner, or a hearty snack!

Recipe Ingredients for Eggy in A Basket

1 slice (28.3g) whole wheat bread
1 medium egg
3 tbsp olive oil

Recipe Directions for Eggy in A Basket

  1. Cut a 1 1/2-2 inch circle in the middle of the bread. Don't throw the circle away!

  2. Pour half of the olive oil into a heated frying pan.

  3. Fry up the bread (both big piece and the circle cut out)

  4. Remove from pan.

  5. Add the remaining oil.

  6. Crack the egg and put it in the pan. Quickly put the bread on top of the egg with the yolk, unbroken, in the middle where the hole is so that it is visible.

  7. Let the egg cook for a few minutes until the egg hass cooked onto the bottom of the bread itself (the egg whites will be nearly cooked, save for the part in the middle with the yolk. However, you will be able to see through the uncooked egg that the bottom of the egg has cooked.)

  8. Gently flip the bread with the egg over, cooking the other side and lightly cooking the yolk, so that it is still raw.

  9. Serve with a dash of salt. I love breaking the yolk and dabbing it up with the bread circle.

  10. Different heat brings different results. 350 degrees works for my stove. Also, feel free to make your egg a sunny side up egg or lose the yolk entirely!
