Breakfast Casserole. To make healthy use whole wheat bread, skim milk and low fat cheese. (doesn't quite taste the same...imagine that)

Recipe Ingredients for Eggstrata

24 large Egg, Whole
12 slice Bread, White, Commercially Prepared
32 oz Pork Sausage, Fresh, Cooked
1 cup, chopped Onions
1 cup, chopped Peppers, Sweet, Red
6 oz Cheddar Cheese
1 cup Cultured Lowfat Butter Milk
1 cup Tomatoes Diced

Recipe Directions for Eggstrata

In large lasagna pan, layer torn bread, chopped onion, chopped pepper, diced tomatoes, shredded cheddar, and sausage. Whip egg and buttermilk together and then pour on top. Bake in 350 degree oven until done.
