From the Silver Spoon. Sometimes egg does not cook in the 5 minutes allotted. In this case, I cut open the tomato to allow the egg to spill out and cook, and then use a spatula to serve on a plate.

Recipe Ingredients for Eggs with Tomatoes

2 tsp olive oil, plus extra for brushing
4 large tomatoes
1 pinch of dried oregano
4 eggs
1 sprig flat-leaf parsley, chopped
1 salt
1 pepper

Recipe Directions for Eggs with Tomatoes

  1. Preheat oven to 350 degrees.

  2. Brush an ovenproof dish with olive oil.

  3. Cut the tops off the tomatoes and scoop out the seeds and some of the flesh.

  4. Sprinkle the insides of the tomatoes with a little salt and place upside down on paper towels for 10 minutes to drain.

  5. Season the insides of the tomatoes with oregano and pepper and divide the olive oil among them.

  6. Place the tomatoes in the prepared dish and bake for 20 minutes.

  7. Remove the dish from the oven, break an egg into each tomato, return the dish to the oven and bake for a further 5 minutes.

  8. Garnish with parsley and serve.
