Recipe Ingredients for Eggs: Spinach and Potato Frittata

4 serving Chino Valley Ranchers Organic Free Range Brown Eggs
6 serving 365 Organic Egg Whites
6 2/5 oz yellow onions
7 1/5 oz potato
6 1/2 oz spinach
5 2/5 oz tomato, chopped
1/2 tsp salt
1/2 tsp pepper
8 serving Diestel Italian Turkey Sausage
2 1/2 oz baby bella mushrooms
4 oz sharp cheddar cheese

Recipe Directions for Eggs: Spinach and Potato Frittata

  1. Preheat oven to 350 degrees F.

  2. Heat olive oil in skillet and saute the onion and potatoes until potatoes are al dente.

  3. Add spinach and mushrooms and cook until wilted.

  4. Mix salt and pepper into beaten eggs.

  5. Remove skillet from stove.

  6. In a casserole dish add sausage, onions, potatoes, mushrooms and egg mixture.

  7. Top with goat cheese.

  8. Bake for ~ 20 minutes or until eggs are thoroughly cooked.
