Recipe Ingredients for eggs, rice, greens

1/2 head romaine lettuce
2 eggs
2 c. cooked brown rice

Recipe Directions for eggs, rice, greens

  1. ? Clean greens (kale, chard, and/or spinach), tear into bite-sized pieces, and sautee in some oil

  2. until tender.

  3. ? Beat 2 eggs in a bowl with seasonings: ?Spike? or a mix of salt, garlic, cayenne.

  4. ? Push greens aside and pour in eggs; scramble the eggs.

  5. ? As the eggs set up, mix in the greens.

  6. ? When the eggs are cooked, stir in 2c. cooked brown rice.
