Italian eggs poached in a spicy tomato sauce over crusty bread: delish!

Recipe Ingredients for Eggs in Purgatory

16 oz crushed tomatoes
4 eggs
1 small onion
1 tablespoon olive oil
4 cloves garlic
1/4 teaspoon oregano
1/4 teaspoon basil
1 pinch red pepper flakes
2 slices french bread

Recipe Directions for Eggs in Purgatory

  1. Carmelize onions in olive oil. Add garlic and allow one minute for it to open up.

  2. Add tomatoes and spices, and salt to taste. Simmer ten minutes or till significantly reduced. Crack eggs gently into the tomato sauce, cover, and allow the white to just cook.

  3. Serve soft poached eggs and sauce immediately with crusty bread.
