Lite version of this cheesy baked egg casserole. Use Sara Lee 45 calorie bread.

Recipe Ingredients for Eggs Portugal

6 slices bread
1/2 pound reduced fat Cheddar cheese, grated
1 pound sausage, pork extra lean
4 eggs
10 1/2 cups lowfat milk
3 tablespoon prepared mustard
1 can (10 3/4 ounces) cream of mushroom soup
1 shot vermouth
4 mushroom (sliced in can)

Recipe Directions for Eggs Portugal

  1. Cut sausage links into thirds and brown (if using bulk, brown sausage and break into bits). Cube bread and place in a 9 x 13 inch casserole. Top with cheese and cooked sausages.

  2. Mix together eggs, milk, mustard and a small dash of salt (optional). Pour over casserole. Place covered casserole in refrigerator and let stand overnight. Great for Christmas morning! Or thanksgiving when you plan on baking all day.

  3. Next morning blend together soup and mushrooms with dry vermouth. Pour over casserole. Bake 1 1/2 hours at 300 F.

  4. I substituted the bread for Sara Lee 100% grain 45 calorie per slice, the 4 eggs for 2 whole eggs and 4 egg whites, you can use 8 egg whites instead, and the whole milk for skim milk. You can use low fat cheese as well. The original was for 6 serving, I cut into 8 to keep portion sizes. Wrap in individual containers and heat n eat for breakfast.
