Recipe Ingredients for Eggs Benedict

1 1/2 tablespoons cornstarch
1/2 teaspoon dry mustard
2/3 cup 1% low-fat milk
1 large egg yolk
2 1/2 tablespoons fresh lemon juice
1 tablespoon butter
1/8 teaspoon salt
24 g (4 slices) bacon
2 eggs
2 light english muffins

Recipe Directions for Eggs Benedict

  1. To prepare Hollandaise sauce, combine 1 1/2 tablespoons cornstarch and mustard in a 2-cup glass measure.

  2. Gradually add milk and egg yolk, stirring with a whisk.

  3. Microwave at high 1 minute; stir well.

  4. Microwave at high an additional 30 seconds or until thick.

  5. Add lemon juice, butter, and salt; stir with a whisk

  6. Meanwhile, fry bacon and discard fat drippings. Dry on a paper towel.

  7. Either poach or fry the eggs.

  8. Layer a toasted english muffin half beneath the bacon and top with an egg and half the sauce.
