Recipe Ingredients for Eggs Benedict

4 eggs, poached
4 ounces ham
2 english muffins
1 salt
1 pepper

For the Hollandaise:
1 egg yolks
1 tbsp cream
2 tsp butter
1 tbsp lemon juice
1 pinch salt
1 pinch sugar
1/4 cup chicken broth
1 tsp white vinegar

Recipe Directions for Eggs Benedict

  1. Split and toast english muffins, warm ham in a skillet and poach eggs.

  2. For the Hollandaise:

  3. Combine all ingredients in the top of a double boiler, over boiling water. Stir until thick, approximately 3 minutes; set aside until ready to use. Do not reheat or cover the pot. Thin, if needed with a little chicken broth. Stir in the vinegar.

  4. To assemble:

  5. Start with the english muffins, top with ham, then egg, and finally sauce. Season with salt and pepper.
