This brunch favorite is perfect for health-conscious guests. Good and low calorie alternative to traditional Eggs Benedict.

Recipe Ingredients for Eggs Benedict II

2 muffin English Muffin
8 slices Honey Ham
1 medium Tomatoes
1 cup Egg Beaters
0.33 cup Chicken Stock
1 fl oz lemon yields Lemon Juice
1 large Egg, Whole

Recipe Directions for Eggs Benedict II

  1. Cook egg beaters in microwave in a ramekin with some Pam to prevent sticking. About cup per container.

  2. Heat chicken stock along with lemon juice to a boil in the microwave.

  3. In a sauce pan, beat the egg with a whisk. Turn the heat on and slowly whisk in the chicken stock mixture. Stir continuously until the mixture thickens.

  4. Slice tomato into four slices. Discard the ends

  5. Toast muffins

  6. Plate starting with the toast, ham, egg, tomato slices, and top with sauce.

  7. Serve hot!
