A slightly modified eggs benedict

Recipe Ingredients for Eggs Benedict Florentine and Shrimp

2 Eggs
1 English muffin, split
6 ounces Spinach, raw
12 Shrimp
2 slices Canadian Bacon
1 ounce White Wine
2 tablespoons Heavy Cream
1/2 teaspoon Sea Salt
1/2 teaspoon Black Pepper
1 teaspoon Olive Oil

Recipe Directions for Eggs Benedict Florentine and Shrimp

  1. Heat water to almost boiling.

  2. Poach eggs until the whites are mostly firm.

  3. Toast the muffin

  4. Heat a pan over medium-high heat

  5. Add the bacon and heat just to warm

  6. Remove and place on muffin halves

  7. Add spinach, half the salt and pepper and saute until just wilted

  8. Remove spinach and split, placing equal portions on muffin halves

  9. Place one egg on each muffin half on top of spinach

  10. Add the oil, shrimp and remaining salt and pepper.

  11. Saute until shrimp are firm.

  12. Remove and place 6 shrimp on each egg.

  13. Add wine to pan and deglaze.

  14. Add cream to pan and heat until it thickens, 1 minute

  15. Remove from heat and split sauce between servings
