Recipe Ingredients for Eggs Baked in Tomatoes and Red Peppers

1/8 cup extra virgin olive oil
1 medium onion, sliced
1 red bell pepper, sliced
28 oz can diced tomatoes, drained
1 salt
1 pepper
4 eggs

Recipe Directions for Eggs Baked in Tomatoes and Red Peppers

Heat 10-in saute pan on medium. Add the oil and cook for about 5 minutes. Add bell pepper and cook for another 7 minutes. Add tomatoes, salt and pepper. Reduce heat, simmer 30-40 min. Creating small wells in tomatoe mixture, break eggs into the tomatoes. Cover with lid and cook until whites have set but yolks are still runny. Sprinkle with cheese (substitute Feta for Mozarella).
