Recipe Ingredients for Eggs baked in a bed of garlicy beet greens

4 large Egg, Whole
4 cup Beet Greens
27 grams Olive Oil
3 clove Garlic
0.25 cup, chopped Onions

Recipe Directions for Eggs baked in a bed of garlicy beet greens

Saute the onions and garlic in olive oil in an oven proof skillet. Dice the beet greens and saute with the onion and garlic. Cover and let wilt over medium heat. Cook for about 10 min. Greens will not be completely cooked through at this point. Crack eggs over the top of the greens and cover with a lid and put the pan into the oven at 350 for 5 min. Remove the lid and cook for another 5 min until the whites are set but yolks are still a little runny.
