Eggplant & Zucchini Lasagna Recipe

This is a vegetarian lasagna that uses roasted eggplant and zucchini slices instead of noodles.

Recipe Ingredients for Eggplant & Zucchini Lasagna

2 1/2 lbs eggplants, sliced lengthwise 3/4 inch thick
5 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
4 medium zucchini, sliced lengthwise 1/3 inch thick
15 ounces part-skim ricotta cheese
2 eggs
1/2 cup grated Parmesan cheese
3 tbsp fresh oregano, chopped
3 tbsp fresh basil, chopped
16 ounces marinara sauce
2 cups mozzarella cheese

Recipe Directions for Eggplant & Zucchini Lasagna

  1. Preheat the oven to 450.

  2. Slice eggplant, brush with olive oil, sprinkle with salt and pepper and lay in a single layer on two cookie sheets.

  3. Roast the eggplant for 20 minutes, turning halfway through.

  4. Bring a pot of water to a boil and then put the zucchini slices in for 3 minutes before draining.

  5. Finely chop the fresh herbs and mix with the ricotta, egg and Parmesan cheese.

  6. Oil the bottom of a 9x13 baking dish.

  7. Once the eggplant is finished roasting, put a layer of eggplant in the bottom, then spread a third of the ricotta mixture, then a third of the tomato sauce. Top with a third of the mozzarella. Repeat this with the zucchini in place of the eggplant for the middle layer, and then again with the eggplant for the top layer.

  8. Bake at 450 for 15-20 minutes.
