1T olive oil 1 med onion 4 cl garlic 2 cand (150z) tomatoes 1/4c fresh basil 1T parsley 1/4t pepper 1 eggplant 2 zucchini 12oz fresh mozzarella 2T parmesan

Recipe Ingredients for eggplant zucchini casserole

1 T Olive Oil
1 medium Onions
4 cloves Garlic
2 pounds Tomatoes, Red, Ripe
1 cup Basil, Fresh
2 T Parsley
1 t Pepper, Black
1 Eggplant
1 T Grapeseed Oil
2 Squash, Summer, Zucchini, Includes Skin
12 oz Mozzarella, Part Skim Milk, Low Moisture Cheese
2 T Parmesan, Grated Cheese

Recipe Directions for eggplant zucchini casserole

  1. 350 oven

  2. prepare garlic tomatoes basil parsley, slice mozz and measure parm. set aside

  3. Saute (large pan) onions, garlic add tomatoe and 1/2 basil simmer 30 min uncovered set aside. clean pan

  4. heat pan too HOT slice zucchini in round (16) slice eggplant length wise 1/2in thich fry in patches till brown

  5. Layer 1/2 eggplant, zucchini, tomatoes mozz, basil & parsley Repeat parm on top

  6. Bake 30 min set 10min
