Recipe Ingredients for Eggplant and Zucchini Burgers

1/2 small (1 lb) eggplant, chopped, sweated
1/4 small (7 oz) zucchini, chopped
3 tbsp olive oil

Recipe Directions for Eggplant and Zucchini Burgers

  1. After salting and pressing the eggplant for about an hour, dry the slices and brush off leftover salt. Heat up a cast-iron roaster or a skillet on the stove.

  2. Lightly coat both sides of the eggplant and zucchini with olive oil, and roast on the stove top until tender. Transfer to burgers- serve warm, with tomato slices.
