Recipe Ingredients for Eggplant Whole-Wheat Lasagna

6 oz Healthy Harvest Lasagna
2.35 cup Newman's Own Sockarooni Sauce
3.5 serving Cottage Cheese Fat Free Small Curd Grade A Pasteurized Dairy
0.33 cup Egg Beaters
1.2 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
6 serving Italian three cheese 2 percent Kraft
1 tsp Onion Powder
1 tsp Marjoram, Dried
0.33 tablespoon Oregano
2 tbsp Parsley
1/4 cup leaves, whole Basil, Fresh

Recipe Directions for Eggplant Whole-Wheat Lasagna

Heat ovenn to 400 F. Spray two nonstick baking sheets with oil. Slice eggplant lengthwise in about 1/3 inch slices. Arrange slices on the baking sheets (don't crowd) and bake about 10 minutes. Turn and bake another 5 minutes. In the meantime, prepare 6 lasagna noodles according to package directions. Drain and place in cold water, then set aside. Whirl cottage cheese, egg beaters, and all spices and herbs in food processor until smooth. Place about a third of a cup of pasta sauce in the bottom of a greased lasagna dish and spread evenly. Place 3 lasagna noodles on top of the sauce, then top them with 1/4 of cottage cheese mixture and another half cup of sauce. Make the next layer consist of slices of eggplant, then cottage cheese, then sauce. Repeat one more layer of lasagna and a last one of eggplant. Top with 6 ounces of shredded Italian cheese. Bake at 350 F for 44 minutes. Let sit for 10-15 minutes before serving.
