Vegetable lasagna without noodles. Uses long, thin slices of eggplant as a substitute

Recipe Ingredients for Eggplant Vegetable Lasagna

916 grams Eggplant
1 cup, chopped Onions
2 clove Garlic
4 oz Mushrooms
2 large Egg, White
1.75 cup Ricotta Cheese
15 oz Organic Pasta Sauce
2 cup Spinach
2 tbsp Olive Oil
4 oz Mozzarella, Part Skim Milk Cheese
3 tsp Parsley, Dried
1 tsp, ground Basil, Dried
0.25 tsp Pepper, Black
0.13 tsp Sea Salt

Recipe Directions for Eggplant Vegetable Lasagna

  1. Heat olive oil in large saucepan. Add chopped onions, mushroomos and garlic, saute 5 mins until tender. Add salt and pepper to taste. Add marinara sauce and stir gently.

  2. Mix ricotta, egg whites, parsley and basil, salt and pepper to taste. Chop spinach, if using fresh and blend in.

  3. Peel eggplants. Slice into long flat slices lengthwise 1/4" thick..

  4. Spread 1/4c sauce on bottom of 13X9" pan. Place eggplants in to cover, in a single layer then spread 1/4c-1/2c ricotta mixture over eggplants. Top with 1/4-1/2c marinara sauce. Repeat layers, ending with marinara. Sprinkle with mozzerella cheese. Cover with foil. Bake in preheated 375 oven for 30 mins. Remove foil and bake another 15-25 mins. until eggplant is tender and cheese is lightly browned.
