Recipe Ingredients for Eggplant & Tomatoes


Ingredients:
1 3/4 lb aubergines
4 tbsps olive oil
1 large onion, finely chopped
6 large tomatoes, peeled and chopped
1 tablespoon garlic, crushed
2 tbsps finely chopped parsley
1 pinch of ground allspice, cinnamon and caster sugar
1 salt and pepper

Top with a mixture of:
2 tbsp dry breadcrumbs
1 tbsp grated cheddar cheese
1 oz butter

Recipe Directions for Eggplant & Tomatoes

  1. Cut the aubergines into smallish pieces, pile them into a colander, sprinkle with salt, then put a plate on top. Weigh down with something and leave to drain for an hour. Rinse and dry.

  2. Heat oven to 375 F and butter a shallow baking dish generously. Heat oil in a frying pan.

  3. Soften the onion and then add the aubergines and fry to a pale golden.

  4. Add the tomatoes and other ingredients and season.

  5. Simmer gently for 5 minutes, stirring occasionally. Transfer to the dish and sprinkle the top with the mixture of cheese and breadcrumbs and dot with butter.

  6. Bake near the top of the oven until browned. (About 30 mins)
