Recipe Ingredients for Eggplant tomato penne pasta salad

1 large eggplant
3 medium tomatoes
1 tablespoon Olive Oil
1 t salt
1/2 t black pepper
4 tablespoons olive oil
1 tablespoon red wine vinegar
4 oz mozzerella cheese
2 oz feta cheese
16 oz dry penne pasta

Recipe Directions for Eggplant tomato penne pasta salad

  1. Cut eggplant into one inch cubes and saute with 1/3 cup water on med high heat for 3 minutes. Add more water if needed and saute 3 more minutes. Chop tomatoes into 1/2 in cubes and add to eggplant and cook 2 minutes. Add mozerella cubed and feta cheese crumbled.

  2. Meanwhile cook the pasta according to directions. Cool the pasta and eggplant mixuture and then mix together.

  3. Add dressing made from the 4T oil and vinegar, oregano, salt and pepper to taste. could add some honey too or garlic chopped or garlic salt.
