Recipe Ingredients for Eggplant & Tomato Pasta

4 serving trader giotto's organic pasta: penne rigatta
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1/2 cup chopped raw Grape Tomatoes
1/4 cup leaves, whole Basil, Fresh
1 tsp Salt
2 tbsp Olive Oil

Recipe Directions for Eggplant & Tomato Pasta

  1. dice eggplant and toss with tomatos in olive oil

  2. spray baking sheet with Pam and spread eggplant/tomatoes in single layer

  3. roast at 400 degrees until tender and browning (30 min?)

  4. cook pasta as directed

  5. drain pasta / save 1/4 c water or use 1/4 c homemade tomato basil sauce

  6. toss everything together

  7. add dollop of ricotta if desired

  8. season with salt and pepper
