Recipe Ingredients for Eggplant-Tomato Bake

2 large eggplant, sliced
3 tomatoes, sliced
1 tablespoon olive oil
1/4 cup parmesan cheese, grated
1/2 tsp garlic salt

Recipe Directions for Eggplant-Tomato Bake

microwave sliced eggplant for a couple of minutes, just until starting to soften with just a sprinkle of the olive oil. Using the rest of the olive oil, lightly grease a glass casserole dish. Layer eggplant, tomato & cheese about 3 times ending with cheese. Bake about 30 minutes at 375.
