1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 1/2 large whole (3" dia) Tomatoes, Red, Ripe
2 tbsp Olive Oil
1 tsp Oregano
1/2 tsp Garlic Powder
1/2 tsp, ground Basil, Dried
4 dash Salt, Table

Recipe Directions for Eggplant & Tomato Bake

broil eggplants 5 min on each side after applying light coating of olive oil and herbs/spices, turn over over to 350, layer tomato & eggplant then drizzle with remaining oil and add add'l spices, bake 25 min with cover, 10 min w/o
