Recipe Ingredients for eggplant tofu spinach jumple

2 cups eggplant
6 ounces tofu
1 tbsp olive oil
2 tbsp garlic
1 tsp sesame oil
2 tbsp soy sauce
1 cup spinach

Recipe Directions for eggplant tofu spinach jumple

  1. heat the oil in a wok,

  2. put in the garlic for a moment,

  3. add the diced eggplant and cook on high heat for a couple of minutes..stirring all the time..turn down the heat a little

  4. add the sesame oil, stir

  5. add he diced tofu and cool until the tofu is browned

  6. Add soy sauce and 1/4 cup water..let cook on low until the eggplant has gotten mushy

  7. Add the spinach..cover and let simmer for about 3 to 5 minutes.
