1 package Blue Menu Low Fat Tofu Extra Firm
2 cup, chopped Cabbage
1.5 cup Cauliflower
1 medium (2-1/2" dia) Onions
1 cup, chopped Peppers, Sweet, Red
1.5 cup (1" cubes) Eggplant
6 cloves, raw Garlic
6 tsp Ginger Root
15 oz Tomatoes Plum Diced

Recipe Directions for eggplant tofu curry

  1. pre roast the eggplant.

  2. put it all in a pot and cook it.

  3. let it simmer on low for a long time.
