Eggplant and Swordfish Pasta Sauce Recipe

A light version of this Italian sauce.

Recipe Ingredients for Eggplant and swordfish pasta sauce

850 g eggplants
70 g onions
10 g garlic
350 g swordfish
120 g tomato sauce
30 g olives
2 tbsp parsley
2 tbsp mint
2 tbsp oregano
1 dash salt
1 dash pepper

Recipe Directions for Eggplant and swordfish pasta sauce

  1. Chop the onions and garlic.

  2. Boil the onions and garlic in a little bit of salted water for 15 minutes. Add water if necessary.

  3. Chop the eggplant into little cubes, 1 cm wide, cca.

  4. Add the eggplants to the onions and cook for 15 minutes, adding water when necessary but without drowning it.

  5. Add the tomato sauce, cook for another 15 minutes. (I used much more tomato sauce, but the Italian kind is less caloric then the cc kind.) Add water if the sauce gets dry.

  6. Clean and chop the fish.

  7. Add the fish and the spices, and the olives (if you wish, the olives are not necessary).

  8. You can add a tsp of olive oil onto the plate.
