Recipe Ingredients for Eggplant stuffed with chicken and rice

1 large eggplant
1 small onion
1/2 cup chopped celery
1/3 cup red pepper, chopped
1 small tomato
2 tbsp olive oil
5 oz chicken
1 cup brown rice
1 egg
4 tbsp parmesan cheese
2 oz cheddar cheese

Recipe Directions for Eggplant stuffed with chicken and rice

  1. brown onions, celery and peppers in olive oil

  2. carve out inside of eggplants and chop

  3. add chopped eggplant and cook until soft with onion mix

  4. cool mixture

  5. add chicken, rice, egg and cheddar cheese

  6. mound into eggplant shells

  7. sprinkle on parmesan cheese

  8. put in casserole with some water around

  9. bake at 350 for 45 minutes

  10. add more water if it dries out
